Brandy Snaps with Ricotta

Ingredients

8 Brandy snaps
200g Ricotta
3tbsp. Damson Plum Jam
20g Dark chocolate (grated)

Method

Combine ricotta and Damson Plum Jam in bowl until mixed thoroughly. Pipe mixture into brandy snaps, from one place the piping nossle in as far as can go and fill from the middle of the brandy snap outwards. Then repeat at the other end to completely fill the brandy snap. Sprinkle grated chocolate over ends of brandy snaps. A great treat for those who don’t love cream as much as others!
